- 1 cup smooth peanut butter
- 11 oz butterscotch chips
- 4 cups chow mein noodles
- 1 cup roasted peanuts (optional)

- Combine peanut butter and butterscotch chips: In a microwave-safe bowl, combine the peanut butter and butterscotch chips. Microwave the mixture in 20-30 second intervals, stirring in between, until the mixture is fully melted and smooth.
- Mix in chow mein noodles and peanuts: Once the peanut butter and butterscotch mixture is smooth, gently fold in the chow mein noodles and roasted peanuts if using. Stir carefully until all the noodles and peanuts are evenly coated with the melted mixture.
- Form the haystacks: Scoop spoonfuls of the coated mixture onto a sheet of wax paper, shaping them into clusters resembling small haystacks. Make sure they are spaced apart to set properly.
- Allow to set: Let the haystacks cool and set at room temperature for about 30 minutes to 1 hour until they harden and hold their shape.
