Ingredients
Scale
Dry Ingredients
- 1 ½ cups semi-sweet chocolate chips
- 1 cup mixed dried fruits (such as cranberries, raisins, and chopped apricots)
- ¾ cup mixed nuts (such as almonds, cashews, and walnuts)
- 1 cup rolled oats
- ½ cup shredded coconut (unsweetened)
- ¼ teaspoon salt
Wet Ingredients
- ¼ cup honey or maple syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
Instructions
- Prepare the Baking Dish: Line an 8×8-inch baking dish with parchment paper to prevent sticking and make it easy to remove the bars later.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, shredded coconut, mixed dried fruits, and mixed nuts. Stir to evenly distribute all the components.
- Melt Wet Ingredients: In a small saucepan over low heat, combine the semi-sweet chocolate chips, coconut oil, honey or maple syrup, vanilla extract, and salt. Stir continuously until the mixture is smooth and fully melted without burning.
- Combine Ingredients: Pour the melted chocolate mixture over the bowl of dry ingredients. Stir thoroughly until every ingredient is well coated and the mixture is evenly combined.
- Press and Chill: Transfer the combined mixture into the prepared baking dish. Press firmly and evenly using a spatula to compact the mixture, ensuring the bars will hold together.
- Refrigerate: Place the dish in the refrigerator and chill for at least 2 hours or until fully set and firm enough to cut.
- Cut and Store: Once set, lift the mixture out using the parchment paper and cut into 12 bars. Store the bars in an airtight container in the refrigerator to keep them fresh.
Notes
- Customize the dried fruits and nuts to your liking for varied flavors and textures.
- For a nuttier flavor and extra crunch, toast the oats and nuts lightly before mixing.
- Use either honey or maple syrup depending on your dietary preferences or availability.
- Keep the bars refrigerated as they are chocolate-based and can soften at room temperature.
