- 3 cups puffed rice cereal
Instructions
- Prepare the Dish: Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides to make it easy to remove the bars later.
- Melt the Chocolate Mixture: In a microwave-safe bowl, combine the chocolate chips, almond butter, and honey. Microwave in 30-second increments, stirring thoroughly after each interval, until the mixture is smooth and fully melted.
- Add Vanilla: Stir in the vanilla extract until the chocolate mixture is evenly combined.
- Mix with Cereal: Add the puffed rice cereal to the chocolate mixture and gently fold it in to ensure all cereal pieces are coated well without crushing them.
- Press into Dish: Pour the mixture into the prepared baking dish and press it down evenly using a spatula to compact the bars.
- Chill to Set: Refrigerate the dish for at least 2 hours, or until the bars are firm and set properly.
- Cut and Serve: Lift the bars out of the dish using the parchment paper overhang, cut into 12 equal squares, and serve immediately.
