Description

These Chocolate Crunch Bars combine rich melted chocolate, creamy almond butter, and honey with crispy puffed rice cereal for a delicious, no-bake treat. Perfectly sweet and crunchy, they make an easy and satisfying dessert or snack that sets in the fridge within a couple of hours.

Ingredients

Scale

Chocolate Mixture

  • 1 1/4 cups dark chocolate chips (or semi-sweet chocolate chips)
  • 1/2 cup almond butter (or any nut butter)
  • 1/4 cup honey (or maple syrup)
  • 1 teaspoon vanilla extract

Cereal

  • 3 cups puffed rice cereal

Instructions

  1. Prepare the Dish: Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides to make it easy to remove the bars later.
  2. Melt the Chocolate Mixture: In a microwave-safe bowl, combine the chocolate chips, almond butter, and honey. Microwave in 30-second increments, stirring thoroughly after each interval, until the mixture is smooth and fully melted.
  3. Add Vanilla: Stir in the vanilla extract until the chocolate mixture is evenly combined.
  4. Mix with Cereal: Add the puffed rice cereal to the chocolate mixture and gently fold it in to ensure all cereal pieces are coated well without crushing them.
  5. Press into Dish: Pour the mixture into the prepared baking dish and press it down evenly using a spatula to compact the bars.
  6. Chill to Set: Refrigerate the dish for at least 2 hours, or until the bars are firm and set properly.
  7. Cut and Serve: Lift the bars out of the dish using the parchment paper overhang, cut into 12 equal squares, and serve immediately.

Notes

  • For a vegan version, use maple syrup instead of honey and ensure the chocolate chips are dairy-free.
  • You can substitute almond butter with any other nut or seed butter, such as peanut or sunflower seed butter.
  • Store the bars in an airtight container in the refrigerator to keep them firm and fresh.
  • Adding a pinch of salt to the chocolate mixture can enhance the flavor profile.
  • Feel free to add extras like chopped nuts or seeds for additional texture and nutrition.
