Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ½ cup sour cream
  • 2 cloves garlic
  • 1 cucumber, peeled, cut in quarters and seeded
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill
  • Kosher salt, to taste

Pizza

  • 4 pieces Greek flatbread or pita breads
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cooked chicken breast
  • ½ cup sliced kalamata olives
  • â…“ cup sliced sun-dried tomatoes
  • 1 cup quartered artichoke hearts, packed in water and drained
  • â…“ cup crumbled feta cheese
  • Oregano, to taste
  • Kosher salt, to taste
  • Fresh dill for garnish
  • Red chili pepper flakes for garnish


Instructions

  1. Prepare Tzatziki Sauce: In a food processor fitted with a metal blade, add garlic, cucumber, and fresh dill. Pulse until finely chopped. Add Greek yogurt, sour cream, lemon juice, and olive oil, and pulse again until well combined. Season with kosher salt to taste. Transfer to a bowl and refrigerate for at least one hour to allow flavors to meld.
  2. Preheat Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.
  3. Assemble Pizzas: Place the Greek flatbreads or pita breads domed side down on the prepared baking sheet. Spread 1 to 2 tablespoons of the prepared tzatziki sauce evenly over each flatbread. Sprinkle each with about ⅓ to ½ cup of shredded mozzarella cheese. Layer shredded chicken, kalamata olives, sun-dried tomatoes, and artichoke hearts evenly over the cheese. Top each with a generous sprinkle of crumbled feta cheese and oregano. Season lightly with kosher salt if desired.
  4. Bake: Place the baking sheet in the preheated oven and bake the pizzas for 10 to 12 minutes, or until the mozzarella is melted, the feta cheese starts turning golden, and the edges of the flatbread are crisp.
  5. Garnish and Serve: Remove the pizzas from the oven. Garnish with fresh dill sprigs and red chili pepper flakes. Optionally, add a little extra feta cheese on top. Cut each pizza into quarters and serve immediately for best taste.
