Description

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (177°C) and spray a 9×13 inch baking dish with nonstick spray to prevent sticking.
  2. Combine Filling Ingredients: In a large bowl, mix together the cooked chicken, softened cream cheese, taco seasoning, cream of chicken soup, rinsed and drained black beans, and the diced tomatoes with green chilies (Rotel). Season with salt and pepper to taste and stir thoroughly until well combined.
  3. Layer the Casserole: Spread half of the crushed corn chips evenly over the bottom of the prepared baking dish. Spoon the chicken mixture on top and spread it out evenly. Sprinkle 1 ½ cups of shredded cheese over the chicken layer, then top with the remaining crushed corn chips.
  4. Bake the Casserole: Place the dish in the preheated oven and bake for 30 minutes. After 30 minutes, remove from the oven, sprinkle the remaining ½ cup of shredded cheese evenly on top, and return to the oven for an additional 5 minutes or until the cheese is fully melted and bubbly.
  5. Serve: Remove from oven and serve the casserole warm. It pairs well with your favorite taco toppings such as sour cream, avocado, or salsa. Store any leftovers in the refrigerator for up to 3 days.
