Ingredients
Scale
Meat
- 1 1/2 pounds boneless skinless chicken thighs or breasts, cut into chunks
- 1 cup Italian sausage, sliced
Vegetables
- 1 medium onion, sliced
- 2 cups potatoes, peeled and cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Liquids & Seasonings
- 2 tablespoons olive oil
- 1/2 cup white wine
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
Instructions
- Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken chunks, season with salt and pepper, and cook until browned on all sides. Remove chicken from skillet and set aside.
- Cook the Sausage: In the same skillet, add the sliced Italian sausage and cook until lightly browned.
- Sauté Aromatics and Potatoes: Add the sliced onion, minced garlic, and potato pieces to the skillet. Cook for about 5 to 7 minutes until the vegetables begin to soften, stirring occasionally.
- Add Bell Peppers: Stir in the sliced red and green bell peppers and cook for an additional 3 minutes to soften slightly.
- Deglaze with Wine: Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes to reduce slightly.
- Simmer with Broth and Spices: Add the chicken broth, dried oregano, and crushed red pepper flakes. Return the chicken to the skillet.
- Cook the Dish: Cover the skillet and simmer for 20 to 25 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish and Serve: Sprinkle fresh chopped parsley on top before serving to add a fresh, vibrant finish.
Notes
- You can use hot or sweet Italian sausage depending on your spice preference.
- For a thicker sauce, let the dish simmer uncovered for an extra few minutes after cooking.
- Serve with crusty bread to soak up the flavorful sauce and complete the meal.
