Description

A quick and flavorful chicken fried rice recipe made with tender diced chicken, scrambled eggs, peas, carrots, and aromatic garlic stir-fried with soy and oyster sauces. Perfect for using day-old jasmine rice to achieve the ideal texture and packed with savory umami flavors.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 large eggs, beaten

Vegetables

  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced

Grains

  • 2 cups cooked jasmine rice (preferably day-old)

Sauces & Oils

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil

Seasoning

  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken and set aside.
  2. Scramble the Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the chicken.
  3. Sauté Garlic: Add minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Cook Vegetables: Add frozen peas and carrots to the skillet and stir-fry for about 2 minutes until heated through.
  5. Add Rice: Add the day-old cooked jasmine rice, breaking up any clumps with a spatula or wooden spoon. Stir-fry for 2 more minutes to heat through evenly.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the skillet and mix well to combine all ingredients thoroughly.
  7. Season the Fried Rice: Stir in soy sauce, oyster sauce, and sesame oil, ensuring the rice and other ingredients are well coated. Continue stir-frying for another 2-3 minutes to allow flavors to meld.
  8. Add Green Onions and Season: Toss in sliced green onions and season with salt and pepper to your taste. Stir everything together until evenly mixed.
  9. Serve: Remove from heat and serve immediately for best taste and texture.

Notes

  • Using day-old jasmine rice is crucial for the best texture as it prevents the rice from becoming mushy.
  • If you prefer, substitute chicken with shrimp or tofu for different protein options.
  • You can add extra vegetables like bell peppers or mushrooms to customize the dish.
  • Adjust soy and oyster sauces according to your preferred saltiness and flavor depth.
  • For a spicier version, add a dash of chili sauce or sprinkle red pepper flakes during seasoning.
