Instructions
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken and set aside.
- Scramble the Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the chicken.
- Sauté Garlic: Add minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Cook Vegetables: Add frozen peas and carrots to the skillet and stir-fry for about 2 minutes until heated through.
- Add Rice: Add the day-old cooked jasmine rice, breaking up any clumps with a spatula or wooden spoon. Stir-fry for 2 more minutes to heat through evenly.
- Combine Ingredients: Return the cooked chicken and scrambled eggs to the skillet and mix well to combine all ingredients thoroughly.
- Season the Fried Rice: Stir in soy sauce, oyster sauce, and sesame oil, ensuring the rice and other ingredients are well coated. Continue stir-frying for another 2-3 minutes to allow flavors to meld.
- Add Green Onions and Season: Toss in sliced green onions and season with salt and pepper to your taste. Stir everything together until evenly mixed.
- Serve: Remove from heat and serve immediately for best taste and texture.
