Description

This Chicken Burrito Bowl is a vibrant and healthy meal combining marinated grilled chicken, nutritious brown rice, fresh veggies, and creamy avocado. Perfect for a quick lunch or dinner, it balances bold flavors with wholesome ingredients for a satisfying and colorful bowl.

Ingredients

Scale

Chicken Marinade

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • Pinch of salt and pepper, or to taste
  • 2 boneless, skinless chicken breasts

Bowl Ingredients

  • 1 cup cooked brown rice
  • 1 tablespoon lime juice
  • 1 small avocado, sliced
  • 2 cups mixed greens
  • ½ cup black beans
  • ½ cup canned corn, drained or grilled
  • â…“ cup cherry tomatoes, quartered
  • 2 tablespoons Greek yogurt
  • ½ red onion, diced
  • 1 jalapeño pepper, sliced
  • Sea salt and freshly ground black pepper, to taste
  • Small handful of chopped cilantro, plus more for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix all the chicken marinade ingredients including olive oil, lime juice, and spices. Add the chicken breasts and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours to enhance flavor.
  2. Cook the Chicken: Grill or pan-sear the marinated chicken over medium heat for 6–8 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through. Once done, let it rest for a few minutes before slicing thinly.
  3. Prepare the Bowls: Divide the cooked brown rice and mixed greens evenly between serving bowls as the base layers for the burrito bowls.
  4. Add Toppings: Top each bowl with the sliced grilled chicken, black beans, corn, cherry tomatoes, sliced avocado, diced red onion, and sliced jalapeño pepper for a mix of texture and flavor.
  5. Garnish and Finish: Drizzle the lime juice over the bowls, then add a dollop of Greek yogurt on top for creaminess. Season with sea salt, freshly ground black pepper, and sprinkle chopped cilantro. Garnish with extra cilantro for a fresh finish before serving.

Notes

  • Marinating the chicken for a longer time enhances the flavor and tenderness.
  • You can substitute brown rice with quinoa or cauliflower rice for a different texture or dietary preference.
  • Grilling gives a smoky flavor but pan-searing is a great indoor alternative.
  • Adjust jalapeño quantity based on your heat preference or omit for a milder version.
  • Greek yogurt adds creaminess; sour cream or a dairy-free alternative can also be used.
