  • 1 1/2 cups long-grain white rice (uncooked)
  • 3 cups chicken broth
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup

  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish to prevent sticking.
  2. Cook the Rice: In a medium saucepan, bring the chicken broth to a boil. Stir in the uncooked rice, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is fully cooked. Remove from heat and set aside.
  3. Sauté Onion and Garlic: Heat a tablespoon of olive oil in a large skillet over medium heat. Add diced onion and sauté until softened, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant, then remove from heat.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked chicken, cooked rice, sautéed onion and garlic, sour cream, cream of chicken soup, milk, 1 cup of cheddar cheese, dried thyme, paprika, salt, and pepper. Mix thoroughly until well combined.
  5. Assemble Casserole: Spread the chicken and rice mixture evenly into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese and 1/2 cup of mozzarella cheese evenly over the top.
