Panini Assembly

  • 2 ripe avocados
  • 4 slices sourdough bread
  • 1 cup fresh spinach leaves
  • 1 cup shredded sharp cheddar cheese


Instructions

  1. Prepare the Chicken: Dice the chicken breasts into bite-sized pieces and season them generously with salt and pepper.
  2. Cook the Chicken: Heat a skillet over medium heat and add 1 tablespoon of olive oil. Add the diced chicken and cook until golden brown and fully cooked, approximately 7 to 10 minutes, stirring occasionally.
  3. Mash the Avocados: While the chicken is cooking, peel and mash the avocados in a bowl with a pinch of salt until smooth and creamy.
  4. Assemble the Panini: Take one slice of sourdough bread and layer on fresh spinach leaves, the cooked chicken pieces, mashed avocado, and shredded cheddar cheese. Top with a second slice of sourdough bread to complete the sandwich.
