Description

This Chicken Alfredo Stuffed Garlic Bread Subs recipe combines tender pieces of sautéed chicken with creamy homemade Alfredo sauce, all nestled inside a garlic butter-toasted Italian loaf. Topped with melted mozzarella and Parmesan cheese, this indulgent sandwich is perfect for a comforting meal or party appetizer.

Ingredients

Scale

Chicken

  • 2 small chicken breasts, cut into ½-inch pieces (approx. 300g total)
  • 1 tablespoon olive oil (approx. 15ml)
  • 1 tablespoon poultry seasoning (or mix of salt, pepper, garlic powder)

Bread and Garlic Butter

  • 1 Italian-style loaf, sliced lengthwise (approx. 12-16 oz / 340-450g)
  • 1 stick unsalted butter (8 tablespoons / 113g), melted
  • 1 tablespoon minced garlic (or garlic paste) (approx. 15g)
  • 1 tablespoon chopped parsley (approx. 4g)
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • ½ stick unsalted butter (4 tablespoons / 57g)
  • 1 tablespoon minced garlic (approx. 15g)
  • ½ cup heavy cream (120ml)
  • ¼ cup shredded Parmesan cheese (about 25g)
  • 1 tablespoon chopped parsley (approx. 4g)

Toppings

  • ½ cup shredded mozzarella cheese (about 56g)

Instructions

  1. Cook Chicken: Cut the chicken breasts into ½-inch pieces, then toss with 1 tablespoon olive oil and 1 tablespoon poultry seasoning or a mix of salt, pepper, and garlic powder. Heat a skillet over medium heat and cook chicken until golden brown and cooked through, about 5-7 minutes, stirring occasionally.
  2. Prepare Garlic Bread: Preheat the oven to 350°F (175°C). Slice the Italian loaf lengthwise. Mix 1 stick melted butter with 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this garlic butter mixture evenly on both bread halves. Place on a baking sheet and toast in the oven for 5-10 minutes until golden and lightly crisp.
  3. Make Alfredo Sauce: In the same skillet, reduce heat to medium-low and melt ½ stick butter. Add 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant. Lower heat to low, then stir in heavy cream, Parmesan cheese, and 1 tablespoon chopped parsley. Simmer gently while stirring for 3-5 minutes until slightly thickened but still pourable. Remove from heat.
  4. Assemble the Subs: Spread half of the Alfredo sauce evenly over the toasted bread halves. Layer cooked chicken pieces on top, then sprinkle shredded mozzarella cheese over the chicken. Spread the remaining Alfredo sauce on top.
  5. Bake Until Melty: Return the assembled bread to the oven and bake at 350°F (175°C) for 5 minutes, or until the mozzarella is melted and bubbling. Remove from oven, slice into 2-3 inch pieces, and serve warm.

Notes

  • Use poultry seasoning or a simple mix of salt, pepper, and garlic powder if poultry seasoning is unavailable.
  • Adjust crushed red pepper flakes to your preferred spice level.
  • For extra flavor, garnish with additional fresh parsley before serving.
  • This sandwich is best enjoyed warm for a gooey and crispy texture.
  • Leftovers can be reheated in the oven to maintain crispness.
