Lasagna Roll-Ups

  • 8 lasagna noodles
  • 1 lb. cooked shredded chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 cups freshly grated Mozzarella cheese, divided
  • 2 cups Alfredo sauce, divided
  • Chopped parsley (optional)


Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with non-stick cooking spray and set aside to prepare for baking.
  2. Cook Noodles: Boil the lasagna noodles in a large pot of salted water following the package directions until al dente. Drain the noodles and carefully lay them out on parchment paper to cool and dry, preventing sticking.
  3. Make Filling: In a medium bowl, combine half of the Alfredo sauce, shredded chicken, garlic powder, Italian seasoning, salt, pepper, and 1 cup of the grated mozzarella cheese. Stir well to evenly mix all ingredients.
  4. Roll Up Noodles: Spread the chicken Alfredo mixture evenly over each lasagna noodle. Roll each noodle up tightly starting at one end and place them seam-side down in the prepared baking dish.
  5. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the tops of the roll-ups. Sprinkle the remaining 2 cups of mozzarella cheese evenly over the top of the sauce-covered roll-ups.
  6. Bake: Bake the roll-ups uncovered for 20 minutes or until the cheese is fully melted, bubbly, and lightly golden.
