Instructions

  1. Cook the Rice: Cook the rice according to package directions or your preferred cooking method. Once cooked, set aside to cool slightly.
  2. Prep the Peppers: Preheat your oven to 400°F (200°C). Cut the tops off the bell peppers and carefully remove the seeds and membranes to prepare them for stuffing.
  3. Cook the Filling: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the ground beef or turkey, breaking it apart as it cooks, and cook until browned and fully cooked through. Drain any excess grease, then add the minced garlic and cook for an additional 30 seconds to release its aroma.
