  3. Season the Beef: Add ground cumin, chili powder, smoked paprika, onion powder, salt, and pepper to the cooked beef. Stir well to combine and cook for an additional 2–3 minutes to develop the flavors.
  4. Combine and Add Cheese: Mix the cooked potatoes and onions into the seasoned beef. While still warm, stir in the shredded cheddar and Monterey Jack cheeses to allow them to melt slightly and bind the mixture.
  5. Warm the Tortillas: Heat the flour tortillas in a dry skillet or microwave until they are soft and pliable, making them easier to fold.
