Ingredients
Scale
Mashed Potato Mixture
- 2 cups mashed potatoes (leftover works great)
- 2 large eggs
- ¾ cup shredded cheese (Monterey Jack or cheddar)
- 2 tablespoons chopped fresh chives
- Salt, to taste
- Black pepper, to taste
Topping
- ¼ cup shredded cheese (Monterey Jack or cheddar)
Serving
- Sour cream, for serving (optional)
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) and grease a mini muffin tin thoroughly to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, ¾ cup of the shredded cheese, and chopped fresh chives. Season the mixture well with salt and black pepper for balanced flavor.
- Fill Muffin Cups: Spoon the potato mixture into the greased mini muffin cups, filling each cup nearly to the top to create full, puffed portions.
- Add Cheese Topping: Sprinkle the remaining ¼ cup of shredded cheese over the tops of each filled muffin cup to create a cheesy crust.
- Bake: Place the muffin tin in the preheated oven and bake for 15 to 20 minutes, or until the tops are golden brown and the puffs are set and cooked through.
- Cool and Serve: Allow the puffs to cool slightly before carefully removing them from the muffin tin. Serve warm, optionally accompanied by sour cream for added richness and tang.
Notes
- Leftover mashed potatoes work best and help achieve the right texture.
- You can substitute Monterey Jack or cheddar cheese depending on your preferred flavor.
- Chives add a fresh mild onion flavor but can be omitted or replaced with green onions.
- Make sure to grease the muffin tin well to avoid sticking.
- These puffs can be reheated in the oven or microwave for quick snacks.
- Adding a bit of garlic powder or smoked paprika can enhance flavor.
