Instructions

  2. Mix Ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, ¾ cup of the shredded cheese, and chopped fresh chives. Season the mixture well with salt and black pepper for balanced flavor.
  3. Fill Muffin Cups: Spoon the potato mixture into the greased mini muffin cups, filling each cup nearly to the top to create full, puffed portions.
  4. Add Cheese Topping: Sprinkle the remaining ¼ cup of shredded cheese over the tops of each filled muffin cup to create a cheesy crust.
