Description

Cheesy Beefy Roll-Ups are a delicious Tex-Mex inspired appetizer or main course featuring seasoned ground beef and a blend of cheddar and mozzarella cheeses rolled inside flaky crescent roll dough. These easy-to-make savory roll-ups are perfect for a quick weeknight dinner or a fun snack, offering a satisfying combination of melty cheese, tender beef, and buttery pastry baked to golden perfection.

Ingredients

Scale

Beef Filling

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/3 cup water
  • 1/4 cup diced onions (optional)

Dough & Cheese

  • 1 can (8 oz) refrigerated crescent roll dough
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Finishing

  • 1 tablespoon olive oil or melted butter (for brushing)
  • Chopped parsley or green onions for garnish (optional)

Instructions

  1. Prepare the beef filling: Preheat your oven to 375°F and line a baking sheet with parchment paper. In a skillet over medium heat, cook the ground beef along with diced onions if using, stirring occasionally, until the beef is browned and fully cooked. Drain any excess grease from the skillet.
  2. Season the beef: Add the taco seasoning mix and water to the cooked beef in the skillet. Stir well to combine all ingredients evenly. Allow the mixture to simmer for 2–3 minutes, letting the sauce thicken slightly. Remove the skillet from heat and let the mixture cool just enough to handle.
  3. Assemble the roll-ups: Unroll the crescent dough and separate it into individual triangles. Spoon about 1 to 2 tablespoons of the seasoned beef onto the wide end of each triangle. Sprinkle a mixture of cheddar and mozzarella cheeses over the beef. Carefully roll up each triangle starting from the wide end to the point, ensuring the filling is securely enclosed.
  4. Prepare for baking: Place each beef and cheese roll-up seam-side down on the prepared baking sheet to prevent them from unrolling during baking. Brush the tops with olive oil or melted butter to achieve a golden, crispy crust.
  5. Bake until golden: Place the baking sheet in the preheated oven and bake the roll-ups for 12 to 15 minutes, or until they turn a beautiful golden brown and the cheese inside is melted.
  6. Garnish and serve: Once baked, optionally sprinkle chopped parsley or green onions over the roll-ups for a fresh touch. Serve warm alongside your favorite dips such as salsa, sour cream, or guacamole for added flavor and enjoyment.

Notes

  • Serve with salsa, sour cream, or guacamole for dipping to enhance the flavors.
  • You can substitute ground turkey or chicken for ground beef for a lighter variation.
  • Add diced jalapeños or a dash of hot sauce to the beef mixture if you prefer a spicy kick.
  • Ensure to brush the roll-ups with olive oil or butter to get a crisp, golden crust.
  • These roll-ups can be made ahead of time and reheated in the oven for convenience.
