Ingredients
Scale
Beef Filling
- 1 lb ground beef
- 1 packet taco seasoning
- Water as directed on seasoning packet
Wrap
- 8 flour tortillas (8-inch)
- 2 cups shredded cheddar cheese
Toppings & Serving
- 1/2 cup salsa
- 1/4 cup chopped green onions (optional)
- Sour cream (optional, for serving)
- Guacamole (optional, for serving)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until it is browned and fully cooked. Drain any excess fat to keep the dish from being greasy.
- Add Seasoning and Simmer: Stir in the taco seasoning along with the amount of water specified on the seasoning packet. Let the mixture simmer for 5 minutes to absorb flavor and thicken slightly.
- Assemble the Roll Ups: Spread about 1/4 cup of the seasoned beef mixture evenly onto each flour tortilla, ensuring even coverage but leaving room at the edges.
- Add Cheese and Roll: Sprinkle shredded cheddar cheese over the beef on each tortilla. Then roll up each tortilla tightly to enclose the filling.
- Arrange in Baking Dish: Place each rolled tortilla seam side down in the prepared baking dish to prevent them from unrolling during baking.
- Bake: Bake the assembled roll ups in the preheated oven for 15 to 20 minutes, or until the cheese is fully melted and the edges of the tortillas are golden brown.
- Garnish and Serve: If desired, sprinkle chopped green onions over the hot roll ups and serve with sour cream and guacamole on the side for dipping or topping.
Notes
- You can substitute cheddar cheese with Monterey Jack or a Mexican cheese blend for variation.
- If you prefer a spicier dish, add diced jalapeños to the beef mixture before rolling.
- To make this recipe gluten-free, use corn tortillas instead of flour tortillas.
- These roll ups can be prepared ahead and refrigerated before baking; just add a few extra minutes to the baking time if baking from chilled.
