Instructions
- Prepare the Dough: In a large bowl, combine the flour, salt, and baking powder. Add the yogurt and 2 tablespoons of olive oil, stirring until a dough begins to form. Transfer to a floured surface and knead for 3 to 4 minutes until the dough is smooth and elastic. Cover the dough and allow it to rest for 15 minutes to relax the gluten.
- Make the Cheese Filling: While the dough rests, mix together the shredded mozzarella, cheddar, garlic powder (if using), and chopped fresh parsley or cilantro in a small bowl. This mixture will provide the flavorful, melty center of the flatbreads.
- Shape the Flatbreads: Divide the rested dough into 4 equal portions and roll each into a ball. Flatten each ball into a small circle with your hands or a rolling pin. Place 2 to 3 tablespoons of the cheese filling in the center of each circle, then fold the edges over the filling to encase it completely, pinching the seams to seal tightly. Gently roll each filled dough ball into a flat round approximately 6 to 7 inches in diameter, being careful not to tear the dough and expose the filling.
- Cook the Flatbreads: Heat a nonstick skillet or griddle over medium heat and add a light coating of olive oil. Cook each flatbread for 2 to 3 minutes on one side, until golden and puffed. Flip carefully and cook the other side for another 2 to 3 minutes until golden, and the cheese is fully melted inside. Adjust the heat as necessary to prevent burning while allowing the cheese to melt.
- Serve Warm: Remove the cooked flatbreads from the skillet and serve immediately while warm and melty. These flatbreads are excellent on their own or as an accompaniment to soups, salads, or dips.
