Instructions
- Prepare the Porridge: In a medium saucepan, combine the rolled oats, milk, cinnamon, vanilla extract, and a pinch of salt. Cook over medium heat, stirring occasionally, until the oats have softened and the mixture thickens to your desired consistency—approximately 5 to 7 minutes for rolled oats or 20 to 30 minutes if using steel-cut oats. Add more milk or water as needed to adjust consistency.
- Caramelize the Bananas: While the oats cook, heat the coconut oil or butter in a small skillet over medium heat. Add the banana slices, sprinkle with brown sugar, and cook for 2 to 3 minutes on one side until golden and caramelized. Flip carefully and cook for another 1 to 2 minutes. Optionally, sprinkle with a pinch of cinnamon for extra warmth.
- Assemble and Serve: Once the porridge is ready, spoon it into serving bowls. Top generously with the caramelized banana slices and your choice of chopped nuts, a drizzle of honey or maple syrup, yogurt or a splash of milk, and granola for added crunch.
