Ingredients
Scale
Pie Crust
- 1 package (2 crusts) refrigerated pie crust
Filling and Topping
- 5 oz caramel topping
- 10 oz apple pie filling
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ cup granulated sugar
- 1 large egg
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it with nonstick cooking spray to prevent sticking.
- Prepare Pie Crusts: Let the refrigerated pie crusts warm slightly at room temperature for easier handling. Dust a clean work surface lightly with flour, then roll out each crust slightly to make them easier to work with.
- Assemble the Cookies: Spread a thin, even layer of caramel topping over one of the rolled-out crusts. Chop the apple pie filling into smaller, manageable pieces and spread them evenly over the caramel layer.
- Create Lattice Topping: Cut the second pie crust into ½-inch wide strips. Arrange these strips in a lattice pattern over the apple filling for a classic pie appearance.
- Cut and Transfer: Using a cookie cutter or a knife, cut out circles or squares from the layered crusts, ensuring each piece includes both bottom crust, filling, and lattice top. Carefully transfer the pie bites to the prepared baking sheet.
- Apply Egg Wash and Sprinkle Topping: Beat the egg in a small bowl until well combined. In another bowl, mix together the granulated sugar, ground cinnamon, and nutmeg. Brush the tops of the pie bites with the egg wash, then generously sprinkle with the cinnamon sugar mixture for added flavor and a golden finish.
- Bake: Bake the cookies in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbling through the lattice.
Notes
- Allow the pie crust to warm slightly to prevent cracking when rolling and cutting.
- Use a sharp knife or cookie cutter for clean edges.
- Ensure apple pie filling is chopped small to fit inside the cookies easily.
- Let cookies cool slightly before serving to allow filling to set.
- Store any leftovers in an airtight container for up to 3 days.
