Description

Buffalo Chicken Roll-Ups are a deliciously spicy and creamy appetizer featuring shredded rotisserie chicken mixed with cream cheese, mozzarella, cheddar, and buffalo sauce, all wrapped in flaky puff pastry and baked to golden perfection. Served with ranch and extra buffalo sauce drizzles, these bite-sized roll-ups make a perfect party snack or game day treat.

Ingredients

Scale

Filling

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 cups (280g) rotisserie chicken, shredded and chopped
  • 1 cup (113g) mozzarella cheese, shredded
  • 1 cup (113g) sharp cheddar cheese, shredded
  • 1/3 cup (84g) buffalo sauce

Pastry and Toppings

  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten
  • Ranch dressing, for drizzling
  • Extra buffalo sauce, for drizzling
  • Parsley, for garnish

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and for easier cleanup.
  2. Make the Buffalo Chicken Filling: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are evenly incorporated. Set this mixture aside.
  3. Prepare the Puff Pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet into a 9×12-inch rectangle to create an even base for the filling.
  4. Fill and Roll the Pastry: Evenly spread the buffalo chicken mixture over the puff pastry, leaving a small border around the edges. Carefully roll the pastry tightly into a log shape, sealing the edges to prevent filling from spilling out.
  5. Slice the Roll: Cut the rolled pastry into 1-inch thick pieces to create individual roll-ups suitable for baking and serving.
  6. Bake the Roll-Ups: Brush the tops of each roll-up with the beaten egg to achieve a golden, shiny crust. Arrange the pieces on the prepared baking sheet and bake for 15–18 minutes or until they turn golden brown. For extra warm filling, you may top with additional buffalo chicken mixture and bake for an additional 6–8 minutes.
  7. Serve and Enjoy: Once baked, drizzle the roll-ups with buffalo sauce and ranch dressing. Garnish with fresh parsley and serve warm for a flavorful and spicy appetizer.

Notes

  • Use rotisserie chicken for convenience and flavor, but leftover cooked chicken also works well.
  • Ensure the cream cheese is softened to make mixing easier.
  • Thaw puff pastry sheet completely before rolling to prevent cracking.
  • For a milder version, reduce the amount of buffalo sauce or serve with extra ranch dressing.
  • Can be prepared ahead of time and baked just before serving to save time.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, and reheat in the oven for best texture.
