Description

This Bubble Up Biscuit Breakfast Casserole is an easy, hearty breakfast dish combining tender biscuit pieces, savory cooked sausage, creamy Velveeta, and mozzarella cheese all bound together with a flavorful egg and milk mixture. Baked to a golden brown, it’s perfect for family breakfasts or brunch gatherings.

Ingredients

Scale

Sausage and Biscuits

  • 1 lb breakfast sausage, cooked and crumbled
  • 1 (12-oz) can refrigerated biscuits (10-count)

Egg Mixture

  • 6 eggs
  • 1¼ cups milk
  • ¼ tsp garlic powder (optional)
  • Salt & pepper, to taste

Cheese

  • 1 (8-oz) package Velveeta, cubed
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Assemble biscuit and sausage layers: Quarter the refrigerated biscuits and evenly spread them in the prepared pan. Sprinkle the cooked and crumbled sausage evenly over the biscuit pieces. Then, add the cubed Velveeta and shredded mozzarella cheese evenly on top.
  3. Mix and pour egg mixture: In a medium bowl, whisk together the eggs, milk, optional garlic powder, and salt and pepper to taste until fully combined. Pour this mixture evenly over the layered biscuits, sausage, and cheese in the pan.
  4. Bake until golden and set: Place the casserole in the preheated oven and bake for 30 to 45 minutes, or until the top is golden brown and the casserole is cooked through and set in the center.
  5. Rest and serve: Remove the casserole from the oven and allow it to cool for 5 to 10 minutes before cutting and serving. This resting time helps the casserole set for easier slicing and enhances flavors.

Notes

  • You can substitute the mozzarella with cheddar or your favorite melting cheese.
  • For a spicier version, add diced jalapeños or use spicy sausage.
  • This casserole can be prepared the night before and baked fresh in the morning for convenience.
  • Ensure the sausage is fully cooked before adding to prevent undercooked meat in the casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
