- 1 cup Medjool dates (about 13 dates), pitted
- â…“ cup sunflower seed butter
- 1 tsp vanilla extract
- â…“ cup protein powder
- ¼ cup cocoa powder
- Pinch of salt
Optional Chocolate Coating
- ½ cup dark chocolate
- ½ tsp coconut oil
Instructions
- Soften Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes. This softens the dates, making them easier to blend and giving the mixture a chewy texture.
- Blend Base Mixture: Drain the water from the dates, then place them in a food processor with the sunflower seed butter and vanilla extract. Blend these ingredients until the mixture resembles a thick, sticky caramel.
- Add Remaining Ingredients: Add protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, pausing to scrape down the sides if needed, until all ingredients are well combined.
- Form Bites: Scoop the dough and shape it into balls about one tablespoon in size. You should get approximately 18 bites.
- Chill Bites (Optional): Place the formed balls on a lined baking sheet and chill in the freezer for at least 30 minutes to firm up if you plan on dipping them in chocolate.
- Melt Chocolate Coating (Optional): Combine dark chocolate and coconut oil in a small microwavable dish. Melt on high in 20-30 second intervals, stirring between each until smooth.
- Dip and Set: Dip each cold bite into the melted chocolate, ensuring full coverage. Place dipped bites back on the lined baking sheet and allow the chocolate to set before serving.
Notes
- To pit Medjool dates easily, cut lengthwise and remove the pit with your fingers or a knife.
- If you don’t have a food processor, a high-powered blender can be used to combine the dates and other ingredients.
- For a nut-free option, sunflower seed butter works well as a substitute for nut butters.
- Protein powder type can be whey, plant-based, or your preferred choice depending on dietary needs.
- If skipping chocolate coating, these bites can be stored refrigerated and eaten as a quick on-the-go snack.
