Description

Deliciously fudgy Brownie Mix Cookies topped with a smooth and creamy Cream Cheese Frosting. These easy-to-make cookies combine the rich flavors of a boxed brownie mix with the classic texture of cookies, enhanced by a tangy and sweet cream cheese frosting. Perfect for gatherings, dessert platters, or anytime a chocolatey treat is needed.

Ingredients

Scale

Cookie Ingredients

  • 1 box (18.3 ounces) Fudge brownie mix (Betty Crocker brand recommended)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup butter, melted
  • 2 tablespoons water

Frosting Ingredients

  • 5 ounces cream cheese, softened
  • 3 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 ¼ cups powdered sugar

Instructions

  1. Prepare cookie batter: In a large bowl, whisk together the brownie mix and all-purpose flour until evenly combined. Stir in the beaten eggs thoroughly, then add the melted butter and water, mixing until the batter is thick and uniform. Cover the bowl and refrigerate the dough for one hour to chill and firm up.
  2. Bake the cookies: Preheat your oven to 350°F (175°C). Lightly grease cookie sheets or line them with parchment paper. Using a tablespoon, scoop portions of the chilled dough and place them on the cookie sheets, spacing at least 2 inches apart to allow for spreading. Bake the cookies in the preheated oven for 10 to 12 minutes until they are set but still fudgy inside. Remove from oven and allow the cookies to cool on the sheets completely before adding frosting.
  3. Make the cream cheese frosting: Using a hand mixer on medium speed, cream together the softened cream cheese and softened butter until smooth and fluffy. Add the vanilla extract and gradually add powdered sugar while continuing to beat the mixture until light and creamy.
  4. Frost the cookies: Once the cookies have cooled completely, spread the cream cheese frosting generously on top of each cookie using a knife or spatula. Serve immediately or store in an airtight container.

Notes

  • For best results, ensure the cream cheese and butter are softened before making the frosting for a smooth texture.
  • Chilling the dough helps the cookies hold their shape better during baking.
  • Allow cookies to cool completely before frosting to prevent melting and sliding.
  • Store frosted cookies in the refrigerator for up to 3 days to maintain freshness.
  • You can substitute the fudge brownie mix with any other brownie mix flavor for variation.
