Description

This flavorful Brown Stew Chicken recipe offers tender, juicy chicken thighs simmered in a rich, aromatic sauce infused with fresh herbs, vegetables, and a hint of sweetness and spice. Perfectly balanced with a touch of lime juice for brightness, this classic Caribbean-inspired dish makes a hearty and satisfying meal.

Ingredients

Scale

Chicken

  • 4 bone-in chicken thighs
  • Salt and black pepper, to taste

Vegetables & Herbs

  • 1 large sweet onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, sliced (any color)
  • 2 carrots, sliced
  • 1 tsp fresh thyme

Liquids & Seasonings

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 2 cups low-sodium chicken broth
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Juice of 1 lime
  • 2 tbsp cooking oil (for searing)

Instructions

  1. Prepare Ingredients: Chop all vegetables as indicated and rinse the chicken thighs under cold water. Pat the chicken dry and season all over with salt and black pepper to taste.
  2. Sear Chicken: Heat oil in a large skillet over medium-high heat. Place chicken pieces skin-side down and sear for about 6-7 minutes per side or until golden brown. Once seared, remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add diced onions and minced garlic. Sauté for 3-4 minutes until the onions become translucent and fragrant, ensuring to scrape up any browned bits from the searing process.
  4. Add Remaining Vegetables and Seasonings: Stir in sliced bell peppers, carrots, fresh thyme, low-sodium soy sauce, brown sugar, cayenne pepper, and chicken broth. Bring the mixture to a gentle boil to combine the flavors.
  5. Simmer Chicken: Return the seared chicken thighs to the skillet. Cover the skillet and reduce the heat to low. Let the stew simmer gently for 30-35 minutes, or until the chicken is cooked through and tender.
  6. Finish and Serve: Just before serving, drizzle the juice of one lime over the stew to add brightness. Serve hot over rice or alongside steamed vegetables for a complete meal.

Notes

  • Adjust cayenne pepper based on your preferred spice level.
  • Using bone-in chicken thighs helps keep the meat juicy and flavorful.
  • Low-sodium ingredients ensure better control over saltiness in the dish.
  • Serve with rice or your favorite side to soak up the delicious sauce.
  • Leftovers keep well refrigerated for up to 3 days.
