Ingredients
Scale
Chicken
- 4 bone-in chicken thighs
- Salt and black pepper, to taste
Vegetables & Herbs
- 1 large sweet onion, diced
- 3 garlic cloves, minced
- 1 bell pepper, sliced (any color)
- 2 carrots, sliced
- 1 tsp fresh thyme
Liquids & Seasonings
- 2 tbsp low-sodium soy sauce
- 1 tbsp brown sugar
- 2 cups low-sodium chicken broth
- 1/4 tsp cayenne pepper (adjust to taste)
- Juice of 1 lime
- 2 tbsp cooking oil (for searing)
Instructions
- Prepare Ingredients: Chop all vegetables as indicated and rinse the chicken thighs under cold water. Pat the chicken dry and season all over with salt and black pepper to taste.
- Sear Chicken: Heat oil in a large skillet over medium-high heat. Place chicken pieces skin-side down and sear for about 6-7 minutes per side or until golden brown. Once seared, remove the chicken from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add diced onions and minced garlic. Sauté for 3-4 minutes until the onions become translucent and fragrant, ensuring to scrape up any browned bits from the searing process.
- Add Remaining Vegetables and Seasonings: Stir in sliced bell peppers, carrots, fresh thyme, low-sodium soy sauce, brown sugar, cayenne pepper, and chicken broth. Bring the mixture to a gentle boil to combine the flavors.
- Simmer Chicken: Return the seared chicken thighs to the skillet. Cover the skillet and reduce the heat to low. Let the stew simmer gently for 30-35 minutes, or until the chicken is cooked through and tender.
- Finish and Serve: Just before serving, drizzle the juice of one lime over the stew to add brightness. Serve hot over rice or alongside steamed vegetables for a complete meal.
