Description

This Broccoli Cheese Orzo is a creamy, comforting side dish featuring tender orzo pasta, vibrant broccoli florets, and a rich blend of sharp cheddar and Parmesan cheeses. Perfectly sautéed garlic and a mixture of chicken broth and milk create a luscious base, making this dish an easy and flavorful accompaniment for any meal.

Ingredients

Scale

Pasta and Vegetables

  • 1 cup orzo pasta
  • 2 cups small broccoli florets

Dairy and Broth

  • 2 tablespoons unsalted butter
  • 1 ¾ cups low-sodium chicken broth
  • ½ cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese

Seasonings

  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Sauté Garlic: In a medium saucepan over medium heat, melt the butter and sauté the minced garlic until it becomes fragrant, approximately 1 minute.
  2. Toast Orzo: Add the orzo to the saucepan and toast it for 1 to 2 minutes, stirring frequently to prevent burning and to enhance its nutty flavor.
  3. Add Broth and Simmer: Pour in the low-sodium chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer uncovered for about 5 minutes, stirring occasionally.
  4. Cook Broccoli: Add the broccoli florets to the saucepan, cover with a lid, and continue cooking for an additional 4 to 5 minutes until the orzo is tender and most of the liquid is absorbed.
  5. Mix in Dairy and Seasonings: Stir in the whole milk, shredded sharp cheddar cheese, grated Parmesan cheese, salt, and black pepper. Mix thoroughly until all the cheese melts and the orzo reaches a creamy consistency.
  6. Rest and Serve: Remove the saucepan from the heat and let the dish sit for 2 minutes to thicken slightly before serving.

Notes

  • For extra creaminess, stir in a splash of cream or an additional ¼ cup of cheese.
  • Use vegetable broth instead of chicken broth to make the dish vegetarian.
  • Add cooked chicken or bacon for a heartier meal.
