Ingredients
Scale
Sweet Potatoes
- 3 large sweet potatoes
- Canola oil, for coating
- Salt, to taste (about ½ teaspoon for coating and additional ½ teaspoon for filling)
Filling
- ½ cup bacon, cooked and crumbled
- 2 tablespoons unsalted butter
- ¼ cup shredded white cheddar cheese
Topping
- 6 large eggs
- ¼ teaspoon black pepper
- Minced scallion, for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the sweet potatoes.
- Prepare Sweet Potatoes: Prick each sweet potato several times on all sides using a fork to allow steam to escape during baking.
- Coat and Bake: Lightly coat each sweet potato with canola oil and sprinkle with salt. Place them directly on an oven rack or baking sheet and bake for 60 to 90 minutes until fork-tender.
- Slice and Hollow: Once baked, carefully slice each sweet potato in half lengthwise. Using a spoon, scoop out the flesh into a mixing bowl, being careful to keep the skins intact to hold the filling.
- Prepare Filling: In the bowl with the sweet potato flesh, add cooked crumbled bacon, unsalted butter, and shredded white cheddar cheese. Mix until well combined.
- Fill Potato Skins: Arrange the hollowed sweet potato skins on a baking sheet. Spoon the filling mixture evenly into each skin.
- Create Egg Wells: Use a spoon to create a small well in the center of each filled potato to hold the egg.
- Add Eggs and Season: Crack one egg into each well. Sprinkle the eggs with salt and black pepper to taste.
- Bake Until Set: Return the filled sweet potatoes to the oven and bake for 15 to 20 minutes or until the egg whites are set and the yolks are cooked to your preference, and the filling is warmed through.
- Garnish and Serve: Optionally, sprinkle the baked potatoes with minced scallions before serving for a fresh, mild onion flavor.
Notes
- Baking time for sweet potatoes can vary based on size; check tenderness with a fork.
- To speed up cooking, you can microwave the sweet potatoes for 5-6 minutes before baking.
- Use a non-stick spray or parchment paper under potato skins to prevent sticking on the baking sheet.
- For a vegetarian version, omit bacon and consider adding sautéed mushrooms or spinach instead.
- Adjust seasoning to taste, and consider adding a pinch of cayenne or smoked paprika for extra flavor.
