Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s hot and ready for baking the taquitos.
  2. Warm Sausages: Heat a skillet over medium heat and cook the fully cooked sausage links until they are warmed through. Remove the sausages from the skillet, but keep the grease in the pan for cooking the eggs.
  3. Scramble Eggs: In a bowl, whisk the eggs with a splash of water or milk, and season with salt and pepper to taste. Pour into the skillet with the sausage grease and cook over medium heat, stirring occasionally until the eggs are fully cooked. Optionally, add spinach to the eggs while cooking.
  4. Warm Tortillas: Heat the tortillas in a dry skillet or microwave just until they are pliable and easy to roll without cracking.
  5. Assemble: Lay out each tortilla and divide the scrambled eggs evenly among them. Top each with shredded cheese and place one sausage link on top of the cheese. Carefully roll each tortilla tightly around the filling and place seam side down on a baking sheet.
