Ingredients
Scale
Pastry
- 1 sheet puff pastry (thawed)
Filling
- 4 large eggs
- 4 slices cooked bacon or breakfast sausage (crumbled)
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tablespoons chopped green onions
- Salt and pepper to taste
Egg Wash
- 1 egg (beaten)
Instructions
- Preheat Oven and Prepare Baking Sheet: Set the oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
- Whisk Eggs Mixture: In a small bowl, combine the 4 eggs, milk, salt, and pepper, whisking until smooth and well blended.
- Scramble the Eggs: Heat a nonstick skillet over medium heat and pour in the egg mixture. Cook the eggs while stirring gently until they are just set but still moist. Remove from heat and allow the scrambled eggs to cool slightly to avoid melting the pastry prematurely.
- Prepare Puff Pastry: Unroll the thawed puff pastry sheet on a lightly floured surface. Cut it evenly into 4 rectangles for individual rolls.
- Fill the Pastry: On each rectangle, spoon an even amount of scrambled eggs, crumbled bacon or sausage, shredded cheddar cheese, and chopped green onions, distributing the fillings evenly.
- Form Rolls: Fold each puff pastry rectangle over the filling and pinch the edges tightly to seal, creating a neat roll shape to prevent filling leakage during baking.
- Apply Egg Wash: Arrange the filled rolls seam-side down on the prepared baking sheet. Brush the tops thoroughly with the beaten egg to give them a shiny and golden crust when baked.
- Bake: Place the baking sheet in the preheated oven and bake the rolls for 15–18 minutes until they puff up nicely and turn an appealing golden brown color.
- Cool and Serve: Remove the rolls from the oven and let them cool slightly on a wire rack before serving to avoid burns and allow fillings to set slightly.
Notes
- Prepare the filling ahead of time to save morning prep time.
- Add sautéed peppers or spinach for added vegetables and flavor.
- Substitute ham for bacon or sausage if preferred.
- Reheat leftover rolls in a toaster oven or air fryer for best texture and taste.
