Description

These Breakfast Pizza Rolls combine the savory flavors of pizza and eggs in a convenient, handheld form. Using whole wheat tortillas layered with a thin egg omelet, pizza sauce, and melted mozzarella, these rolls are cooked gently in a skillet to create a delicious and satisfying breakfast that’s perfect for busy mornings or brunch.

Ingredients

Scale

Ingredients

  • 4 8″ whole wheat tortillas
  • 1 cup pizza sauce
  • 8 Omega-3 eggs
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil (for cooking)
  • 3 tbsp milk (optional, for fluffier eggs)
  • Salt and pepper, to taste

Instructions

  1. Prepare Tortillas: Spread 3-4 tablespoons of pizza sauce evenly onto each whole wheat tortilla. Set them aside for later assembly.
  2. Preheat Skillet: Heat a 10-inch nonstick skillet over medium-low heat. Add enough olive oil to lightly coat the bottom of the pan to prevent sticking.
  3. Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk (if using), salt, and pepper until well combined and slightly frothy.
  4. Cook Egg Layer: Pour one-quarter of the egg mixture into the heated skillet, spreading it evenly to form a thin omelet. Cook until the egg is mostly set but remains a bit soft on top, ensuring it doesn’t overcook.
  5. Add Toppings: Spoon 3-4 tablespoons of pizza sauce evenly over the egg layer, then sprinkle 3-4 tablespoons of shredded mozzarella on top.
  6. Add Tortilla: Place one of the prepared tortillas sauce side down onto the egg and cheese layer. Press gently to help the tortilla adhere to the egg mixture.
  7. Cook and Roll: Carefully swirl the tortilla in the pan to make sure the egg finishes cooking and the tortilla sticks well. Slide the tortilla onto a plate or cutting board, then flip it back into the pan with the tortilla side down. Cook for an additional 30 seconds to seal.
  8. Finish and Serve: Slide the assembled egg-topped tortilla onto a plate. Let it cool just a little, then roll it up with the tortilla side out to form a pizza roll. Repeat the process with the remaining ingredients to make four rolls total.

Notes

  • Using whole wheat tortillas adds extra fiber and nutrients to this recipe.
  • Adding milk to the eggs makes the omelet fluffier but is optional.
  • You can customize the pizza sauce and cheese amount based on your taste preference.
  • Be careful not to overcook the eggs to keep them tender and soft inside the roll.
  • Serve warm for best flavor and texture.
