Fudge Base
- 2 cups white chocolate chips
- 1 (14 oz) can sweetened condensed milk
- 1/4 cup instant vanilla pudding mix (dry)
- 1 teaspoon vanilla extract
- Pinch of salt
Chocolate Ganache Topping
- 1/2 cup heavy cream
- 1/2 cup semisweet chocolate chips
- 2 tablespoons butter
Instructions
- Prepare the pan: Line an 8×8-inch pan with parchment paper, leaving an overhang on the sides for easy removal later.
- Make the fudge base: In a saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir constantly until melted and smooth. Remove from heat and stir in the instant vanilla pudding mix, vanilla extract, and a pinch of salt until fully incorporated.
- Set the base: Pour the fudge mixture into the prepared pan and smooth the top with a spatula. Place it in the refrigerator to chill while you prepare the topping.
- Prepare the ganache: In a separate small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the semisweet chocolate chips and butter. Let it sit for 1 minute, then stir until the mixture is smooth and glossy.
- Top the fudge: Pour the chocolate ganache evenly over the chilled fudge layer and spread it smoothly with a spatula.
- Chill and set: Refrigerate the fudge for at least 4 hours or until firm. Once fully set, use the parchment paper overhang to lift the fudge from the pan and cut it into approximately 25 squares for serving.
