- 3 eggs
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted and cooled slightly
- 1/3 cup honey
- 1 1/2 tsp vanilla extract
- 1 cup blueberries
Instructions
- Preheat oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the bars.
- Mix dry ingredients: In a large bowl, combine the quick cooking oats, oat flour, brown sugar, baking soda, cinnamon, and salt. Stir well to evenly distribute all ingredients.
- Combine wet ingredients: In a separate bowl, whisk together the eggs, almond milk, melted and slightly cooled coconut oil, honey, and vanilla extract until homogeneous.
- Mix ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined to avoid overmixing, then carefully fold in the fresh blueberries to maintain their shape and juiciness.
- Bake the bars: Transfer the batter into a greased or lined baking dish, spreading evenly. Place in the preheated oven and bake for 35 to 40 minutes until golden brown and a toothpick inserted comes out clean.
- Cool and slice: Remove the baking dish from the oven and allow it to cool in the pan for about 5 minutes. Then transfer the baked mixture onto a wire rack to cool completely before slicing into 16 bars. Serve and enjoy your healthy breakfast bars!
