Ingredients
Scale
Croissants
- 4 large croissants (preferably fresh or day-old)
Ricotta Filling
- 1 cup ricotta cheese (whole milk or part-skim)
- 1 tablespoon honey (plus more for drizzling)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest (optional, for a citrusy twist)
Fruit
- ½ cup fresh blueberries (plus more for garnish)
Finishing Touches
- 1 tablespoon powdered sugar (optional, for dusting)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and facilitate even baking.
- Prepare the Ricotta Filling: In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and lemon zest if using. Stir thoroughly until the mixture is smooth, creamy, and well blended.
- Assemble the Croissants: Slice each croissant horizontally into top and bottom halves. Spread a generous layer of the ricotta filling onto the bottom half of each croissant, then evenly sprinkle fresh blueberries over the ricotta.
- Bake the Croissants: Place the assembled croissants on the prepared baking sheet. Bake in the preheated oven for 10 to 12 minutes, or until the croissants turn golden brown and the ricotta filling is slightly set but still creamy.
- Finish with Honey Drizzle: Remove the croissants from the oven and immediately drizzle additional honey over the tops to enhance the sweetness and add a glossy finish.
- Serve & Garnish: Garnish each croissant with extra fresh blueberries and a light dusting of powdered sugar if desired. Serve warm to fully enjoy the blend of flaky pastry, creamy filling, and sweet notes.
Notes
- Using day-old croissants can help achieve a firmer structure that holds the filling better during baking.
- Whole milk ricotta provides creamier texture, but part-skim works well for a lighter option.
- Lemon zest adds a refreshing brightness but can be omitted if preferred.
- Serve these croissants warm for the best flavor and texture experience.
- Leftover croissants can be stored in an airtight container and gently reheated in the oven to preserve flakiness.
