Description

This Black Bean Crunch Wrap Supreme is a delicious vegetarian twist on a classic favorite, featuring seasoned black beans, crispy tostada shells, and melty cheese all wrapped in a warm flour tortilla. Perfect for a quick and satisfying main course with a burst of Mexican-American flavors.

  • 4 large flour tortillas (10 inch)
  • 1 cup cooked black beans, slightly mashed
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 cup nacho cheese sauce or warm queso
  • 4 tostada shells
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1 tablespoon vegetable oil for cooking


Instructions

  1. Prepare the Bean Mixture: In a small saucepan over medium heat, combine the black beans, chili powder, ground cumin, garlic powder, and salt. Cook for 3 to 4 minutes, stirring frequently, until the mixture is heated through and slightly thickened.
  2. Assemble the Wrap: Lay one large flour tortilla flat on a clean surface. Spoon about 1/4 cup of the seasoned black beans into the center of the tortilla. Drizzle a few tablespoons of warm nacho cheese sauce over the beans. Place one tostada shell on top of the beans.
  3. Add Toppings: Spread sour cream evenly over the tostada shell. Then layer shredded lettuce, diced tomatoes, and shredded Mexican blend cheese on top.
  4. Fold the Tortilla: Carefully fold the edges of the tortilla up and over the center filling in overlapping sections, forming a hexagon shape. If the tortilla doesn’t fully cover the filling, use an extra small tortilla piece on top before folding to help seal it.
  5. Cook the Crunch Wrap: Heat a large skillet over medium heat and add the vegetable oil. Place the crunch wrap seam side down in the skillet to help keep it sealed. Cook for 3 to 4 minutes until the underside is golden brown and crisp.
  6. Flip and Finish Cooking: Carefully flip the wrap and cook the other side for another 2 to 3 minutes until crisp and heated through.
  7. Repeat and Serve: Repeat the assembly and cooking steps with the remaining tortillas and filling. Serve the black bean crunch wraps warm, optionally adding sliced avocado, jalapeños, or taco sauce for extra flavor.
