  • 1 large onion, cut into wedges

  • 8 fresh thyme sprigs
  • 4 sage leaves

  • 1 lemon, zested and juiced
  • 1/2 cup parsley leaves
  • 1/4 cup sage leaves
  • 2 tablespoons fresh thyme leaves


Instructions

  1. Make the Herb Butter: In a food processor, blend the softened butter, fine sea salt, coarse ground pepper, Worcestershire sauce, smashed garlic cloves, lemon zest and juice, parsley, sage, and thyme leaves until the mixture is smooth and well combined. Set the herb butter aside.
  2. Prepare the Turkey and Oven: Preheat your oven to 325°F (162°C). Adjust the oven racks to accommodate the size of the turkey and roasting pan for even cooking.
  3. Prepare Roasting Pan: Place the onion wedges, chopped carrots, celery stalks, smashed garlic cloves, fresh thyme sprigs, sage leaves, and chicken stock or water in the bottom of a large roasting pan. Position a roasting rack above the vegetables to hold the turkey.
