Instructions

  1. Sear the Beef: Heat the butter in a large cast iron or heavy-bottomed skillet over medium-high heat. Meanwhile, sprinkle the beef tips with flour, salt, and pepper, tossing to coat evenly. Add half of the coated beef to the skillet and cook until a crust forms on the outside but the meat is not fully cooked. Remove to a plate and repeat with the remaining beef pieces.
  2. Sauté the Onions: In the same skillet, add the diced onions and sauté for about 1 minute until slightly softened and fragrant.
  3. Combine Ingredients in Slow Cooker: Place the seared beef and sautéed onions into the bottom of a greased 6-quart slow cooker. Add beef broth, sliced mushrooms, garlic powder, granulated sugar, onion powder, dried thyme, Worcestershire sauce, bay leaves, and sliced pepperoncini peppers. Cover with the lid.
  4. Cook Slowly: Cook on high heat for 3 to 4 hours or on low heat for 5 to 7 hours until the beef is tender and the flavors meld.
  5. Thicken the Gravy: About 20 minutes before the cooking ends, carefully remove ½ cup of cooking liquid from the slow cooker. In a small bowl, whisk the cornstarch into this liquid until smooth. Stir this mixture back into the slow cooker, cover, and let cook for the remaining time to thicken the gravy.
