Instructions
- Sear the Beef: Heat the butter in a large cast iron or heavy-bottomed skillet over medium-high heat. Meanwhile, sprinkle the beef tips with flour, salt, and pepper, tossing to coat evenly. Add half of the coated beef to the skillet and cook until a crust forms on the outside but the meat is not fully cooked. Remove to a plate and repeat with the remaining beef pieces.
- Sauté the Onions: In the same skillet, add the diced onions and sauté for about 1 minute until slightly softened and fragrant.
- Combine Ingredients in Slow Cooker: Place the seared beef and sautéed onions into the bottom of a greased 6-quart slow cooker. Add beef broth, sliced mushrooms, garlic powder, granulated sugar, onion powder, dried thyme, Worcestershire sauce, bay leaves, and sliced pepperoncini peppers. Cover with the lid.
- Cook Slowly: Cook on high heat for 3 to 4 hours or on low heat for 5 to 7 hours until the beef is tender and the flavors meld.
- Thicken the Gravy: About 20 minutes before the cooking ends, carefully remove ½ cup of cooking liquid from the slow cooker. In a small bowl, whisk the cornstarch into this liquid until smooth.
