Perfectly balanced with soy sauce, garlic, ginger, and a touch of sweetness from brown sugar, these skewers are ideal for a casual dinner or summer BBQ.
Ingredients
Scale
Meat
- 1½ pounds flank steak
- ½ teaspoon salt (or to taste)
- ½ teaspoon pepper (or to taste)
- 12 wooden skewers (16 inches long), soaked in water for 30 minutes
Teriyaki Marinade
- ¼ cup low sodium soy sauce
- ¼ cup water
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 2 teaspoons fresh ginger, minced
- 2 teaspoons cornstarch
Instructions
- Prepare the Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
- Slice the Flank Steak: Trim any excess fat from the flank steak and slice it into 1-inch wide strips against the grain for tenderness.
- Season the Meat: Lightly season the sliced steak with salt and pepper on all sides.
- Make the Teriyaki Sauce: In a small saucepan, combine soy sauce, water, rice vinegar, brown sugar, minced garlic, and minced ginger. Bring the mixture to a gentle boil over medium heat.
- Thicken the Sauce: In a separate small bowl, mix cornstarch with a tablespoon of water to make a slurry. Slowly whisk the slurry into the simmering sauce, stirring continuously until thickened, about 1-2 minutes. Remove from heat and let cool.
- Marinate the Steak: Place the sliced steak in a bowl or resealable bag and pour half of the cooled teriyaki sauce over it. Marinate for at least 15 minutes, or up to 1 hour for more flavor.
- Assemble the Skewers: Thread the marinated flank steak strips onto the soaked skewers evenly.
- Preheat the Grill: Heat a grill or grill pan to medium-high heat, lightly oiling the grates to prevent sticking.
- Grill the Skewers: Place the beef skewers on the grill and cook for about 3-4 minutes per side, or until cooked to your desired level of doneness. Brush with remaining teriyaki sauce during grilling for extra flavor.
- Serve: Remove the skewers from the grill and let rest for a few minutes before serving. Enjoy with steamed rice or a fresh salad.
Notes
- Soaking wooden skewers is crucial to prevent them from burning on the grill.
- Adjust the sweetness by varying the amount of brown sugar in the marinade.
- Flank steak works best for this recipe but skirt steak or sirloin can be used alternatively.
- For a gluten-free version, use tamari instead of soy sauce.
- Marinate the steak longer for deeper flavors, but avoid marinating more than 4 hours to prevent meat breakdown.
