Beef Mixture
- 1 pound ground beef
- 1 ounce taco seasoning (store-bought or homemade, 1 packet)
- 4 ounces cream cheese (½ brick)
- ½ cup sour cream
- ½ cup salsa (store-bought or homemade)
- 1 cup freshly shredded pepper jack cheese
Tortillas & Toppings
- 8 tortillas (corn or flour)
- Salsa, for serving
- Guacamole, for serving
- Sour cream, for serving
- Shredded cheese, for serving
Instructions
- Preheat the Oven: Preheat your oven to 375°F and spray a 9×13-inch baking pan or jellyroll pan with nonstick spray. Set it aside to prepare for baking the taquitos.
- Cook the Ground Beef: In a large pan set over medium-high heat, cook the ground beef until it is no longer pink. Break it apart continuously as it cooks to ensure even browning.
- Add Taco Seasoning: Stir in the taco seasoning thoroughly, ensuring the beef is evenly coated with the seasoning for maximum flavor.
- Melt in Cream Cheese: Add the cream cheese to the pan and stir until it completely melts and blends smoothly into the beef mixture, creating a creamy texture.
- Combine Sour Cream and Salsa: Stir in the sour cream and salsa until the mixture is evenly combined and heated through. Once incorporated, remove the pan from the heat to prevent overcooking.
- Mix in Pepper Jack Cheese: Add the shredded pepper jack cheese and continue mixing until it melts completely and is well distributed throughout the beef mixture.
- Prepare the Tortillas: Microwave the tortillas for 10 seconds to make them pliable and easier to roll without cracking.
- Assemble the Taquitos: Place a tortilla on a clean work surface and spoon a portion of the beef mixture onto one side. Roll the tortilla tightly around the filling and place it seam-side down in the prepared baking pan. Repeat with the remaining tortillas and beef mixture.
- Bake the Taquitos: Bake for about 15 minutes or until the taquitos turn crispy and golden. Watch carefully to avoid burning or drying out the taquitos.
- Serve and Enjoy: Serve the baked taquitos warm with your preferred toppings such as salsa, guacamole, sour cream, and shredded cheese for a delicious meal or appetizer.
Notes
- You can use either corn or flour tortillas depending on your preference.
- For extra crispy taquitos, broil for an additional 1–2 minutes but watch closely to prevent burning.
- Store leftover taquitos in an airtight container in the refrigerator for up to 3 days and reheat in the oven for best texture.
- Customize the spiciness by adjusting the salsa and taco seasoning amounts.
- If cream cheese is too cold, microwave it for a few seconds before adding to help it melt more evenly.
