Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

- Season the Dish: In a small bowl, mix together dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Sprinkle this seasoning mixture evenly over the vegetables and feta in the dish.
- Bake Vegetables & Feta: Place the dish in the oven and bake for 25 minutes, or until the vegetables are tender and the feta cheese becomes soft.
- Add Spinach: Carefully remove the dish from the oven and stir in the chopped baby spinach until it’s evenly distributed among the cooked vegetables and feta.
- Add the Eggs: Create four small wells in the vegetable and feta mixture, then crack one egg into each well.
- Final Bake: Return the dish to the oven and bake for an additional 10 minutes, or until the egg whites are set and the yolks remain runny to your preference.
- Garnish & Serve: Sprinkle chopped fresh basil or chives on top before serving. Serve warm, ideally with crusty bread on the side.
