Ingredients
Scale
Vegetables and Meat
- ½ small onion, diced
- ½ small green bell pepper, diced
- ½ small red bell pepper, diced
- 1 cup diced cooked ham
Egg Mixture
- 8 large eggs
- ¼ cup half-and-half or whole milk
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon coarse salt
- ¼ teaspoon pepper
Other
- 2 tablespoons butter (for sautéing)
- ¾ cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch or a similarly sized baking dish to prevent sticking.
- Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and bell peppers and sauté for 3-4 minutes until they become softened and fragrant.
- Add Ham: Stir in the diced cooked ham and continue cooking the mixture for another 2-3 minutes. Once done, remove the skillet from heat and set aside.
- Prepare Egg Mixture: In a medium bowl, whisk together the eggs, half-and-half (or milk), onion powder, garlic powder, coarse salt, and pepper until the mixture is fully combined and slightly frothy.
- Combine Ingredients: Add the cooked vegetable and ham mixture into the egg mixture. Stir gently to combine all the ingredients evenly.
- Transfer and Top: Pour the combined egg mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top to create a cheesy crust during baking.
- Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the eggs are set through and the top is golden brown and slightly puffed.
- Cool and Serve: Allow the baked omelet to cool for a few minutes before slicing into four servings. Serve warm and enjoy!
Notes
- You can substitute ham with cooked bacon or sausage if preferred.
- For a dairy-free version, use a plant-based milk and cheese alternative.
- Ensure not to overbake to keep the omelet moist and tender.
- Feel free to add additional vegetables like mushrooms or tomatoes for variety.
