Description

This Baked Denver Omelet is a delicious and hearty breakfast or brunch dish featuring sautéed onions and bell peppers, diced ham, and a fluffy egg mixture baked to perfection with melted cheddar cheese on top. It’s easy to prepare and serves a family of four, making it a perfect weekend treat or special occasion meal.

Ingredients

Scale

Vegetables and Meat

  • ½ small onion, diced
  • ½ small green bell pepper, diced
  • ½ small red bell pepper, diced
  • 1 cup diced cooked ham

Egg Mixture

  • 8 large eggs
  • ¼ cup half-and-half or whole milk
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon coarse salt
  • ¼ teaspoon pepper

Other

  • 2 tablespoons butter (for sautéing)
  • ¾ cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×9-inch or a similarly sized baking dish to prevent sticking.
  2. Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and bell peppers and sauté for 3-4 minutes until they become softened and fragrant.
  3. Add Ham: Stir in the diced cooked ham and continue cooking the mixture for another 2-3 minutes. Once done, remove the skillet from heat and set aside.
  4. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, half-and-half (or milk), onion powder, garlic powder, coarse salt, and pepper until the mixture is fully combined and slightly frothy.
  5. Combine Ingredients: Add the cooked vegetable and ham mixture into the egg mixture. Stir gently to combine all the ingredients evenly.
  6. Transfer and Top: Pour the combined egg mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top to create a cheesy crust during baking.
  7. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the eggs are set through and the top is golden brown and slightly puffed.
  8. Cool and Serve: Allow the baked omelet to cool for a few minutes before slicing into four servings. Serve warm and enjoy!

Notes

  • You can substitute ham with cooked bacon or sausage if preferred.
  • For a dairy-free version, use a plant-based milk and cheese alternative.
  • Ensure not to overbake to keep the omelet moist and tender.
  • Feel free to add additional vegetables like mushrooms or tomatoes for variety.
