- 1 medium spaghetti squash
- 1/2 teaspoon garlic powder

- 1 tablespoon Parmesan cheese (optional, for a crispy topping)

- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Prepare the squash: Preheat your oven to 400°F (200°C). Using a sharp knife, carefully cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy bits from the center.
- Season and oil: Drizzle the inside of each half with the olive oil, then sprinkle with garlic powder, salt, and pepper to taste. Rub the seasoning evenly across the flesh.
- Bake the squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper or foil. Bake them in the preheated oven for about 35-40 minutes, until the flesh is tender and easily shredded with a fork.
- Shred the flesh: Remove the squash from the oven and let it cool slightly. Using a fork, scrape the flesh to create spaghetti-like strands right inside the squash shells.
- Add the cheese: Mix the Boursin cheese thoroughly with the spaghetti squash strands inside each shell. If using, sprinkle the mozzarella cheese evenly on top, then add the Parmesan cheese for a crispy finish.
- Bake again to melt cheese: Return the stuffed squash halves to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
