  • 1 medium spaghetti squash
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

  • 1 tablespoon Parmesan cheese (optional, for a crispy topping)

Instructions

  1. Prepare the squash: Preheat your oven to 400°F (200°C). Using a sharp knife, carefully cut the spaghetti squash in half lengthwise and scoop out the seeds and stringy bits from the center.
  2. Season and oil: Drizzle the inside of each half with the olive oil, then sprinkle with garlic powder, salt, and pepper to taste. Rub the seasoning evenly across the flesh.
  3. Bake the squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper or foil. Bake them in the preheated oven for about 35-40 minutes, until the flesh is tender and easily shredded with a fork.
  4. Shred the flesh: Remove the squash from the oven and let it cool slightly. Using a fork, scrape the flesh to create spaghetti-like strands right inside the squash shells.
  5. Add the cheese: Mix the Boursin cheese thoroughly with the spaghetti squash strands inside each shell. If using, sprinkle the mozzarella cheese evenly on top, then add the Parmesan cheese for a crispy finish.
  6. Bake again to melt cheese: Return the stuffed squash halves to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
