Ingredients
Scale
Filling Ingredients
- 1 cup fresh spinach, chopped (or ½ cup frozen, thawed and drained)
- 1 cup canned or jarred artichoke hearts, drained and chopped
- 4 oz cream cheese, softened
- ½ cup shredded mozzarella cheese
- ½ cup shredded Monterey Jack or Swiss cheese
- ¼ cup grated Parmesan cheese
- 1 small garlic clove, minced
- ¼ teaspoon black pepper
- â…› teaspoon crushed red pepper flakes (optional)
- Pinch of salt
Additional Ingredients
- 2 tablespoons unsalted butter, softened
- 8 slices sourdough bread
Instructions
- Prepare the filling: In a mixing bowl, combine softened cream cheese, shredded mozzarella, Monterey Jack or Swiss cheese, grated Parmesan, chopped spinach, drained artichoke hearts, minced garlic, black pepper, red pepper flakes (if using), and salt. Mix thoroughly until well blended and uniform.
- Assemble sandwiches: Lay out 8 slices of sourdough bread. Spread the artichoke-spinach cheese mixture evenly onto 4 of the slices, dividing the filling equally. Top each filled slice with a remaining slice of bread to form 4 complete sandwiches.
- Butter exterior: Lightly spread the softened butter on the outside of each sandwich on both sides, ensuring even coverage to promote browning and prevent sticking during cooking.
- Cook sandwiches: Heat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3 to 4 minutes per side, pressing gently with a spatula. Cook until the bread is golden brown and the cheese inside is completely melted.
- Rest and serve: Remove the sandwiches from the skillet and let them rest for 1 minute. Slice diagonally if desired and serve immediately while warm for the best texture and flavor.
Notes
- Using fresh spinach gives a brighter flavor, but frozen spinach works well when properly thawed and drained.
- You can substitute Monterey Jack with Swiss cheese according to your preference.
- Adjust red pepper flakes to control the heat level or omit for a milder flavor.
- Serve with a side salad or tomato soup for a complete meal.
- Make sure the skillet is at medium heat to avoid burning the bread before the cheese melts.
