Description

This Amazing Old-Fashioned Rice Pudding is a creamy, comforting dessert made by slowly cooking rice in milk, cream, and spices on the stovetop. It’s infused with cinnamon, nutmeg, and vanilla, with optional raisins for a touch of sweetness. This classic American dessert offers a rich texture and warm flavor, perfect served warm or chilled.

Ingredients

Scale

Main Ingredients

  • 3/4 cup uncooked white rice
  • 1 1/2 cups water
  • 2 cups whole milk (plus more if needed)
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
  • 1 tablespoon butter

Instructions

  1. Cook the Rice: In a medium saucepan, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and rice is tender.
  2. Add Dairy and Spices: Stir in the milk, heavy cream, sugar, salt, cinnamon, and nutmeg. Cook uncovered over medium-low heat, stirring frequently, for 20–25 minutes, or until the mixture thickens and becomes creamy. If the pudding gets too thick, add a splash of milk to loosen the texture.
  3. Finish and Serve: Stir in the vanilla extract, raisins if using, and butter. Cook for another 2 minutes, then remove from heat. Let cool slightly before serving warm, or chill and serve cold.

Notes

  • Use short-grain rice for a creamier texture.
  • Skip the raisins or substitute with chopped dates or dried cranberries if desired.
  • The pudding will thicken more as it cools—add extra milk when reheating if needed.
