Description

These Air Fryer Chicken Fajitas are a quick, flavorful, and healthy meal option, featuring tender chicken strips and colorful bell peppers tossed in a blend of Mexican-inspired spices and air-fried to perfection. Ready in just 25 minutes, they make for an ideal weeknight dinner served with warm tortillas and fresh toppings.

Ingredients

Scale

Chicken and Vegetables

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced

Seasonings and Extras

  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
  • Juice of 1 lime

To Serve

  • 8 small flour or corn tortillas
  • Fresh cilantro, for garnish
  • Sliced avocado, sour cream, or salsa for serving (optional)

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) and allow it to fully preheat to ensure even cooking.
  2. Prepare the chicken and vegetables: In a large mixing bowl, combine the sliced chicken breasts, red, yellow, and green bell peppers, and red onion. Drizzle with olive oil and add chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Toss everything thoroughly to coat evenly with the oil and spices.
  3. Arrange in the air fryer basket: Spread the seasoned chicken and vegetables out evenly in the air fryer basket in a single layer to allow proper air circulation and cooking.
  4. Air fry: Cook for 12 to 15 minutes, shaking the basket halfway through the cooking time to ensure even roasting. The chicken should be fully cooked (internal temperature of 165°F) and the vegetables slightly charred but tender.
  5. Add lime juice: Once cooked, squeeze the fresh lime juice over the fajita mixture and gently toss to combine and add brightness.
  6. Warm the tortillas: Place tortillas in the air fryer for 1 to 2 minutes to warm them up and make them soft and pliable.
  7. Serve: Serve the cooked chicken and vegetable mixture wrapped in the warm tortillas. Garnish with fresh cilantro and add optional toppings such as sliced avocado, sour cream, or salsa as desired.

Notes

  • For extra heat, add more cayenne pepper or a dash of hot sauce to the mixture.
  • You can substitute chicken breasts with chicken thighs for juicier meat.
  • Use corn tortillas to keep the dish gluten-free.
  • Adjust cooking time if your air fryer model runs hotter or cooler.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
