Description

  • 48 mini candy robin eggs


Instructions

  1. Prepare the pans: Spray two muffin pans with baking spray to prevent sticking.
  2. Melt butter and marshmallows: In a large pot or Dutch oven over medium-low heat, melt the butter. Add the marshmallows and stir continuously until they are completely melted and combined. Remove from heat and stir in vanilla extract and salt.
  3. Mix in the cereal: Add the Rice Krispies cereal to the melted marshmallow mixture and gently fold until evenly coated.
  4. Shape the nests: Using a heaping ¼ cup of the mixture, press it into each of the 16 muffin cups. Use a 1-tablespoon measuring spoon to press down the center, forming a nest shape.
  5. Set the nests: Let the nests cool and set in the muffin pans for about one hour before removing them.
  6. Color the coconut: Place the shredded coconut into a large resealable plastic bag. Add 3-4 drops of green food coloring, seal the bag, and shake vigorously until the coconut is evenly colored green.
  7. Decorate the nests: Sprinkle about 1 tablespoon of the green coconut into the center of each nest. Top each with three mini candy robin eggs for a festive touch.
